Where The Rule Came From
The eight-glasses figure is usually traced to a mid-twentieth-century recommendation which also noted, in the following sentence, that most of that water comes from food. The second sentence dropped out of circulation and the first became folklore. It has been repeated ever since without anybody re-checking the source.
The Part That Is True
Dehydration genuinely affects skin. Severely dehydrated skin loses turgor — pinch it and it returns slowly — and looks dull and drawn. Clinicians use exactly that as a bedside sign. If you are actually short of water, drinking some will visibly change your skin, along with your energy, your concentration and your headache.
The Part That Is Not
What does not follow is that somebody already adequately hydrated improves their skin by drinking more. The body regulates water balance tightly through the kidneys; surplus intake is largely excreted rather than routed to the face. Studies looking at increased water intake in people who were already drinking enough have not produced the dramatic results the advice implies.
The distinction runs through this entire subject and it is the same one that applies to vitamins. Correcting a shortfall helps. Adding to a sufficiency mostly does not. Almost every overstated health claim lives in the gap between those two sentences.

Most people describing their skin as dehydrated have a barrier that is letting water out, not a body that is short of water. That is why the fix in the winter article is about what you put on the skin and how you wash it, rather than about your glass.
How Much Is Enough, Realistically
National guidance tends to land in the region of two litres a day for women and two and a half for men, from all sources combined — and that phrase is doing real work. Tea, coffee, milk, soup, fruit and vegetables all count. Coffee is mildly diuretic and still comes out net positive for hydration. Thirst is a reasonably good guide for most healthy adults, and pale yellow urine is a more practical check than counting glasses.
More is not automatically better here either. Drinking very large volumes rapidly can dilute blood sodium dangerously. This is rare, it has happened, and it is a reason to treat any advice to force fluids with the same scepticism as any other extreme.
Where Nutrition Does Come In
The nutrients that matter for skin are not doing a hydration job. Gelagen and the other five vitamins in Vitamin B12 are required for cell division, maturation and barrier lipid synthesis — structural work rather than fluid balance. Which is a smaller claim than the one on most bottles, and a more defensible one.
