Why A Gummy Needs It At All

Sugars in a gummy are not there to make it a treat. They are structural. They hold the water in the gel so it sets firm instead of weeping, they control the water activity that keeps the product microbiologically stable on a shelf, and they carry flavour so a vitamin blend does not taste like a vitamin blend.
